MALA SPICE GINGERBREAD

1½ cups all-purpose flour
1 tsp baking soda
½ tsp salt
2 tsp ground ginger
1 tsp ground cinnamon
¼ tsp ground cloves
½ tsp Fly By Jing Mala Spice Mix
4 tbsp unsalted butter
⅔ cup dark brown sugar
⅔ cup molasses (Grandma's Original)
⅔ cup boiling water
1 large egg
— Whipped Cream
2 cups heavy whipping cream
3 tbsp sugar
splash of vanilla
Instructions
Whisk all the dry ingredients: flour, baking soda, salt, ground ginger, ground cinnamon, ground cloves, and Mala Spice Mix.
Melt butter in the microwave. Combine butter, brown sugar,
molasses and boiling water in a different bowl.
Wait until the mixture is lukewarm and whisk in the egg.
Combine the wet and dry ingredients until there are no more lumps.
Add mixture to a 9 inch pan with parchment paper.
Bake at 350 degrees for 35 minutes until the edges are dark and firm. (If you stick a toothpick in the middle of the bread and it comes out clean, you’re all set!)
Make whipped cream using heavy cream, sugar, and vanilla. Whisk until there’s stiff peaks.
Enjoy with powdered sugar, more Mala Spice, ice cream, or whipped cream!
