The Filipino classic Chicken Adobo gets a spicy makeover c/o Cheska Mae Perez (@nomswithmae). Cozy up with this dish and let it warm you up in the cooler weather. Braised until tender, don’t be surprised when the skin and meat glides off the bone.

  • 5 chicken drumsticks, skin-on

  • 1 cup vinegar

  • ¾ cup of soy sauce

  • 2 tbsp Fly By Jing Chili Crisp Vinaigrette

  • 1 tsp whole black peppercorns

  • 4 bay leaves

  • 2 tbsp sugar

  • 1 tbsp honey

  • 1 tbsp oil

  • 6 garlic cloves, minced

  • Cooked rice



In a bowl, add drumsticks, vinegar, soy sauce, chili crisp vinaigrette, whole black peppercorns, bay leaves, sugar, and honey and let marinate for 1 hour.

After marination is done, heat a pan on medium heat and add oil.

Cook garlic for 1-2 minutes in the pan.

Remove chicken drums from marinade and cook for 15 minutes. Flip after 10 minutes.

Pour remaining marinade in the pan and let simmer.

Cover pan and let cook for another 30 minutes. Remove from heat.

Serve with rice, and enjoy!
