Topped with scallions, fried shallots, glazed pork belly and Fly By Jing Zhong sauce — This is the restaurant style Pineapple fried rice that you can make at home!
INSTRUCTIONS
- Cut pineapple into 1/2-1 inch chunks.
- Slice onion, thinly cut red pepper, cut Thai chilis, and mince ginger and garlic.
- Cut chinese sausages.
- Combine sauce ingredients, set aside.
- Glaze cashews and choice of cooked meat. Note: I used crispy pork belly!
- Whisk together eggs, scramble, and set aside.
- Fry the Chinese sausage until cooked and set aside.
- Sauté minced garlic and ginger. Add in white part of scallions and chilis, onions, peppers, and rice.
- Add in toppings - cashews, sausages, eggs and pineapples.
- Season with the leftover sauce and msg.
- Assemble with pork belly or choice of meat, scallion, onion crisps, and Zhong Sauce. Enjoy!
