Pineapple Fried Rice

Ingredients

- 2 cups day old rice
- 3 eggs
- 1/2 pineapple, chunks
- 1/2 onion
- 1/2 red bell pepper
- 2-3 sweet chinese sausages
- 1-2 thai chilis
- 4 cloves garlic
- 1 tsp ginger

Sauce:
- 3 tbsp oyster sauce
- 2 tbsp fish sauce
- 1 tbsp honey
- splash of Maggi Seasoning
- sprinkle white pepper
- sprinkle curry powder
- MSG

Toppings:
- cashews
- Pork belly or choice of meat

Garnish:
- fried shallots
- green onions
- Zhong Sauce

Topped with scallions, fried shallots, glazed pork belly and Fly By Jing Zhong sauce — This is the restaurant style Pineapple fried rice that you can make at home!

 

INSTRUCTIONS

  1. Cut pineapple into 1/2-1 inch chunks.
  2. Slice onion, thinly cut red pepper, cut Thai chilis, and mince ginger and garlic.
  3. Cut chinese sausages.
  4. Combine sauce ingredients, set aside.
  5. Glaze cashews and choice of cooked meat. Note: I used crispy pork belly!
  6. Whisk together eggs, scramble, and set aside.
  7. Fry the Chinese sausage until cooked and set aside.
  8. Sauté minced garlic and ginger. Add in white part of scallions and chilis, onions, peppers, and rice.
  9. Add in toppings - cashews, sausages, eggs and pineapples.
  10. Season with the leftover sauce and msg.
  11. Assemble with pork belly or choice of meat, scallion, onion crisps, and Zhong Sauce. Enjoy!
