GINGER MINT FRIED RICE
Finally, a fried rice recipe that satisfies the full range of every taste bud's desire. Sharp ginger meets warm and numbing Mala Spice Mix with some fresh and fragrant mint — alongside so, so much more. Recipe by Dorcas Lin (@miracletoneslover).
2 chicken thighs
2 tbsp oil
1.5 oz ginger, finely chopped
2 cups of white rice, cooked
2 tsp salt
3 eggs
1 tsp cornstarch
3 tbsp Fly by Jing Mala Spice Mix
2.5 tbsp fresh mint, roughly chopped
Instructions
Cut your chicken into thin strips, then into 1 inch chunks.
Place chicken into a bowl and add in 2 tbsp of Fly by Jing Mala Spice Mix along with cornstarch. Mix with your hands and set aside to marinate.
Scramble eggs and 1 tsp salt together in a small bowl. Set aside.
Heat 1 tbsp oil in a big pan on high heat. Pour in your eggs and stir consistently for about a minute until eggs are solidified pieces then set aside.
Add in the rest of your oil to the pan, cook ginger for about a minute until fragrant. Then add chicken and 1 tsp salt.
Cook for about 5 minutes then add rice to the pan. Stir in the rest of your Mala Spice Mix. Cook for about 3 more minutes.
Add your cooked eggs into the pan and stir until well combined.
Finally, turn off the heat and fold in your mint.
Serve immediately!
