Cheese Potato Pancake

2 large russet potatoes
Salt
1/4 cup cornstarch
1/4 cup sweet rice flour
2 1/2 tbsp sugar
Mozzarella cheese (block or shredded)
Thinly cut sausages of your choice
Instructions
Peel and cut large russet potatoes into small chunks. Cut mozzarella into small pieces and thinly slice sausages to fit the inside of the pancake.
Add potatoes to a pot with water and salt. Boil for 15 minutes or until fork tender.
Drain potatoes and add to a bowl.
Add sweet rice flour, cornstarch, and sugar to the bowl.
Mash until it reaches a dough consistency.
Start molding pancakes: Flatten dough, add cheese + sausages, fold and flatten.
Add oil to a pan and panfry until golden.
Garnish with scallions (optional) and drizzle Sichuan Chili Crisp.
