  1. Red Sichuan Peppercorns. This deep, earthy, electrifying gongjiao tribute pepper is so prized is used to be given as a tribute to the Emperor. Harvested this summer, this is the most potent, tingly peppercorn you have tasted (and what gives Sichuan Chili Crisp its tingly!). The best way to store is in the freezer, where they will last at least a year. To use, heat them up slowly in a pan on the stove top to allow them to release their oils. Take care not the burn! You can then sizzle them with chilies in the wok, or throw them whole into braises or hot pot

  2. Erjingtiao Chili Flakes. Intensely fragrant, moderate spice, slightly smoky. The perfect topping for mapo tofu, or try on top of pasta instead of Calabrian chili flakes. Heck, we're even putting them on popcorn.Ā
